The first time I tried this dish was in Zamora, Michoacan Mexico in a popular restuaruant called “La Pantera Rosa”, The pink panther.
Carne en su jugo, is a meat, bacon, and bean caldo (soup) in which the meat is cooked in its own juices and in a green tomatillo salsa. If I am not mistaken this dish is from Guadalajara, Mexico, but I will say that through out the years, a variety of different recipe versions have developed through out the country and this just happens to be the one I have stuck with and the one my family and I enjoy.
I am more than happy and excited to share it with you because it is a specialty dish that my family goes crazy for, especially when I accompany it with hand made corn tortillas, me and my daughter Valentina (5) make our selves.
