Swai Fish with Avocado Jalapeño Sauce

Like I’ve mentioned in many other posts. I’m not a cook, I’m not trying to be a cook, I’m not trying to open up a business selling my food or my recipes. I’m just a Mexican girl trying to keep up with my ancestors cooking lol, you know what I mean.

Ive tried this recipe a few ways, and to be honest i havnt perfected it, so i might come back and update with some tweaks, but here goes nothin’

Ingredients:

4 swai fish fillets

1 egg

2 white sandwich bread (toasted)

1 table spoon garlic salt with parsely

1 table spoon dried parsley

1 table Parmesan cheese

for the sauce

1/2 avocado

1/4 cup low fat Greek yogurt ( i really prefer sour cream)

1/4 cup of water

1/4 cup of olive oil

1/4 onion

1 cup of cilantro

2 jalapeños, but i would add a serrano pepper if you like the heat

Additional: olive oil for frying and cabbage for topping

How to:

Take out your tilapias and lay out on a cookie sheet or a large plate.

blend: toasted bread, cheese, garlic salt, parsley

Beat one egg in a plate

take your tilapia lay on the egg to get the mixture on each side of the fillet then lay on the dry bread mixture on both sides as well.

lay your fish on the tray for a few minutes before cooking.

The Sauce!!!

Add the sauce ingredients named above in the the blender and blend baby, thats it! Ive tried this with sour cream and greek yogurt, they both are good, but my preference is the sour cream, but ultimately its up to you depending on your restrictions or preferences.

back to the fish

drizzle your olive oil on to your pan, heat up to medium heat, add your tilapia.

Brown each side until nicely golden and fully cooked. usually 8 minutes.

how to serve:

So you can use this fish for fish tacos like i did this time, or you can add a side of rice or some some sweet potatoes yuuuum
