Southwest Chicken Chimichuri salad

Not a chef or the greatest cook, but i love re-creating foods i enjoy.

Here is a salad from applebees that i love, it usually comes with a 4 oz steak but thought id give it a shot with chicken since we are staying away from red meats at home for a bit 🙂

Servings: 4ish

Ingredients for the salad:

Chicken breast i used 3 chicken breast fillets

Romain Lettuce

2 tomatos

1/4 onion

canned corn (drained)

Black beans (drained)

1 large cucumber peeled and diced

2 avocados

2 small bags of doritos nacho chips or tortilla strips

Ingredients for the chimichuri sauce:

1 cup of flat leave parsley

1 1/2 cup of cilantro

1 tbsp dried oregano

4 garlic cloves (peeled)

1/4 tbsp salt

Lemon squeez

tiny bit of lemon zest

2 table spoons of apple cider vinegar or red wine vinegar

3/4 cup of olive oil

Prep time!!!!

I first start off making the chimichuri sauce because I marinate my chicken with it.

Put everything in the blender! and blend lol thats it! check on consistency if too think add just a tad bit of water.

The chicken:

Marinate the chicken with the chimichurri sauce and season with a little salt, if your chimichurri is already salty, skip the salt.

Put chicken in a ziplock and put in refrigerator for 30 min.

While chicken is marinating start the salad.

The salad:

Chop up your romain lettuce, use it as the bed on your bowl.

dice tomatoes and cucumber

slice onion very thin

add 1/2 of the beans and corn depending on your preference.

set aside.

(WORKOUT) lol jk this was just my routine.

Combining it all:

pull out chicken before you hit the shower (should be out of the fridge for about 15-20 min before you cook)

add about 1 table spoon of olive oil on to a pan

once warm (NOT HOT) olive oil burns its nutritious value of too hot.

add chicken and cook each side until nicely brown, about 8-10 min on each side depending on the thickness.

DORITOS. Get the bags open up and crunch with your hands just by squeezing them, dont over do it, just enough so you get some good crunchies in your salad.

Top the salad with the doritos.

Mix Mix Mix the salad!

Slice your chicken

TO SERVE:

Get your plate, start of by serving your salad, top it with your chicken, slice avocados and add to the plate.

And last drizzle your chimichuri sauce on to your chicken and salad, up to you how much you want to use.
