
Ingredients:
chopped up cooked chicken
black beans or Peruvian your choice (canned or home baked, just keep an eye out on the sodium)
white rice or quinoa
tomoatoe
1/4 onion
small handful of cilantro
cabbage
chile jalapeño
Lemon
Salt
Sour cream
Directions
in a bowl first add cooked white rice or qinoa
next add about half a cup to a cup of black beans
Add pre cooked chicken (or your choice of protein, chopped up carne asada works well too)
Top with your pico de gallo: diced tomato, diced onion, chopped cilantro, shredded cabagge, diced jalapeño squeez of lemon and pinch of salt
add 1 teaspoon of Sour Cream
