Mexican Breakfast sandwich

Ingredients:

Whole wheat muffin pre sliced

1 egg

1 slice of tomato

1/4 of avocado

left over refried beans (optional)

olive oil/avocado oil

Pickeled Jalapeño / chile en vinagre or any type of salsa or hot sauce

salt & pepper

How to:

Whole Wheat Muffin – Toasted

Add Fry your egg in olive oil or avocado oil, try to avoid the salt

After the egg is done to your preference, remove from pan and slighly pan fry the ham in the remainder oil, dont add any more

add a layer of refried beans

add egg and ham to your muffin.

Top with slice of avocado, tomato, and chile en vinagre
